November saw Matt and Julie O’Leary from AOM Group travel to Hong Kong to see AOM branded beef showcased in the MLA Pencil Box Culinary Challenge. The Pencil Box Competition is based around the famous “Black Box” competition, however focuses on the young and upcoming; featuring 24 young chefs from culinary institutions such as the Hospitality Industry Training and Development Centre (HITDC) and the Hong Kong Culinary Academy (HKCA).

AOM branded Oyster Blade steak was included along with fresh ingredients in a mystery basket for the creation of the dishes. Competitors had three hours to create, cook and present two main course dishes (2 portions each) utilising the Australian red meat. The pencil box challenge is an initiative by MLA to create awareness of the non-loin cuts and encourage greater utilisation of the whole carcass.

The winning dish was created by Lee Zhi Cheng whose winning dish featured AOM branded beef, prepared a slow cooked Oyster Blade Steak with creamy potatoes, roasted pumpkin and stuffed mushrooms. In great news for the culinary industry, the first runner up was also female, 19 year old Ng Yuen Yung Jaycee.
